Ever since my boyfriend developed a banana allergy, I always end up with too many extra bananas and then feel pressure to come up with a fun new recipe idea to use them up! Needless to say, I’ve tried a lot of banana recipes over the past 6 months.
This recipe is a combination of a few of my favorite things all pressed into one – bananas, dark chocolate and cream cheese frosting. The cupcakes are fluffy and moist and the cream cheese frosting is the perfect combination of sweet and rich.
Make sure not to overmix your batter – the bananas will make the cupcake too dense. Mix until just combined to ensure the cupcakes stay light and fluffy!
