S’mores Waffles

My mom used to make waffles for everything. Every family get together we ever had on Easter, Christmas, birthdays, etc. were always brunch instead of dinner. We’d have homemade belgian waffles with fresh fruits and real maple syrup, scrambled eggs with her ‘secret ingredient,’ ham and more. I’ve always loved breakfast more than the other meals (mostly because I could have chocolate in my breakfast and it was okay) so mom’s family brunches were always my favorite.

When I moved into my first apartment this past summer, I knew a waffle maker was high on my list of things to get for the apartment. I procrastinated on getting one. Shopped around online but never really committed. Finally, one weekend after my parents had puppy-sat for us while we went to a wedding, my mom sent me home with none other than her own waffle maker. She may have gotten herself a new one, but I like to think the family memories associated with it have some value, right?

This week Zack saw one of those how-to baking videos online for a s’mores waffle sandwich. I didn’t make him a sandwich, but I was inspired to make these delicious s’mores waffle. They’re light and buttery filled with graham cracker pieces and chocolate chips. Spread some marshmallow cream on while they’re still warm and you have one delicious masterpiece!

Now, don’t forget – you should always butter your waffle iron instead of using spray. Helpful tip: to make the process less painful, use a silicone basting brush to get butter easily into all the divets of your press – plus you can just toss it in the dishwasher when you’re done!
