Peanut Butter Blondies

Brownies have ALWAYS been my favorite dessert, but I’ve recently been trying to branch out and try new flavors instead of just banking on my traditional chocolate recipes. As my chocolate peanut butter brownies are my most popular recipe to date, I decided to do an inside-out version of them with these peanut butter blondies! 

 I always used to love using regular Reese’s Peanut Butter Cups in my desserts as they are definitely much tastier than the Reese’s Pieces, but I love the color that these little bites give the desserts. When you work with chocolate in 75% of your recipes, the colors can start to get a little boring!

I think the real champion of this recipe though is the chocolate ganache. I spent my entire life thinking that just melting the chocolate in a bowl with some veggie oil was good enough to do the trick and could never figure out why it wouldn’t stay that soft, delicious texture I wanted. Well, many years later I discovered the secret to perfect ganache and it’s 100 times easier than I would have imagined.

Chocolate Chip Peanut Butter Blondies

Servings 9 Large Brownies

Ingredients

Chocolate Chip Peanut Butter Blondies

  • 1/2 cup unsalted butter melted
  • 1/2 cup peanut butter brand name
  • 1 cup brown sugar
  • 1 egg room temperature
  • 1/2 tsp. salt
  • 1 cup flour
  • 3/4 cup mini chocolate chips

Chocolate Ganache

  • 1 cup chocolate chips any type
  • 1 cup heavy cream

Instructions

For the Peanut Butter Blondies

  1. Preheat the oven to 350 degrees. Lightly grease a 9x9 pan and line with parchment papers. Set aside.

  2. Whisk together the melted butter and brown sugar. Slowly incorporate the vanilla and peanut butter until smooth. Add the egg and the egg yolk.

  3. Using a wooden spoon, add the flour and salt until just combined. Stir in the mini chocolate chips until evenly distributed.

  4. Spread the batter evenly across the pan. Bake for 25-30 minutes or until evenly set. You don't want to overbake or you'll lose the gooey center. Remove from oven and let cool.

Chocolate Ganache

  1. While the blondies are baking, place your 1 cup of chocolate chips in a bowl and set aside.

  2. Heat the heavy cream in a small saucepan until steaming, but not boiling. Pour the heated cream over your chocolate chips and cover with a lid. Let sit undisturbed for 10 minutes.

  3. Using a small whisk, gently whisk the chocolate and heavy cream until smooth. Let cool for 30 minutes or until the consistency thickens enough to spread.

  4. Spread the ganache over the brownies and top with mini Reese's Pieces, peanut butter cups, or anything desired! Slice it up and enjoy!
